Artichoke and Spinach Wraps

artichoke heart spinach veggie wrap - vegan

Needed a quick dinner tonight and this is what I came up with.  They were delicious and filling!

4 ancient grain wraps

4 tbsps artichoke and spinach hummus (or plain hummus)

4 cups organic baby spinach leaves

12 marinated artichoke hearts

1 cup cooked brown rice

1 red pepper cut into strips

Spread one tbsp hummus over the entire wrap, add 1 cup of spinach, 1/4 cup brown rice, 3 artichoke hearts chopped, and 3 or 4 red pepper strips.  Roll it up and enjoy!  These were a big hit with my family, and we’ll be definitely making them again soon.

Vegetarian Recipes, Vegan Couscous Wrap

This is an easy recipe I threw together for lunch today using a few leftovers and some fresh veggies.  It tasted amazing, so I thought I’d share it with you.

Wraps are very versatile and make a great lunchbox item for my ‘tween’ daughter.

1 ancient grain wrap

hummus (I used artichoke hummus, but plain would be just as good)

1/2 cup of couscous (I had couscous left over from the night before, but you can use any cooked grain)

carrot strips (I use the peeler to make my carrot strips…nice and easy)

1 cup mixed baby greens, lettuce, or spinach

Spread the hummus over the entire wrap (use as much or as little as you like).  Add the couscous, carrots, and baby greens.  Roll it up and enjoy!
